Day one, set intent & check out this lamb slider recipe 🦢

 





Good Morning.

May Day.

Today is day one.

Today is the day to set intent.

What is it that you would like to start?

A stronger focus on health?

Finally starting a pet project?

Maybe it is walking every day

or even just waking up and thanking God.

Everything has a starting point.

A beginning.

I am putting focus on movement and 

diet.

Moving more throughout the day.

Focusing on sourcing local whole foods.

Seems simple, like I already do this.

As time goes by we tend to slide and not be as vigilant .

Producers change recipes, fade from doing business or 

your personal needs change.

This week I will be cleaning out my pantry.

Five years of living here and mildly rotating

seasonally still has products on the shelves

that may be outdated.

Below is a list...a very brief list of what I stock in my pantry.

Everything must be wheat free and I am strict about organic or non-gmo

at the very least.



Parring down my pantry over the past few years has been the goal.

Quality over quantity.

Yes, I used to stock boxes of Mac & cheese just in case along

with a bunch of refined foods for ease, but that no longer fits

into my lifestyle. I would rather just eat an apple with peanut butter

now, ya know?

Keeping it simple and basic makes everything easier.

I do not need 5 types of mustard.

Nope.

Just simple old mustard is fine by us.

Resisting the urge to try everything that you see

at a gourmet shop or (for me) the farmers markets

is key too. I have 3 jars of jams from years back

of which I have no idea where I got them.

Stock basics.

Eat as I go with everything else.

The first of May is one of my favorite days.

Everything is just brimming with life & energy.

Weather is splendid, skies are usually blue...like September

but with a bit of a bite to the air.

I loved decorating it.

Perhaps I should install one here at Stone Hollow?

Hummmmmm....

Now Spring to me means lamb, as I grew up eating it and

when we went to *fancy* restaurants I just loved ordering

lamb with that iridescent green mint jelly.

*Remember that?

Anyway, this is an updated family friendly supper

You can serve them like shown or add them to a Greek salad...

which is what I do.

That sauce is everything... be sure to chill it before serving.

So what will your *thing* be to focus upon this month?

Perhaps instead of one thing, you can do a few things a day or a week.

Like tackling that junk drawer or sifting through the laundry room

and finally throwing out those single socks you have been keeping

for years. 

Maybe it is a mindset.

A new perspective, an intent to finally meet up with old friends.

Whatever IT is, I am here for you.

As we do these things we are growing, thriving....

This season is a growing season.

May you all have a splendid day.

Look to the positive.

Spread kindness.

Embrace charm, whimsy and joy.
